Eckert’s freshly picked blackberries taste great with home-made pound cake! This recipe is from the Eckert Family Cookbook.
Pound Cake
- 3 cups sugar
- 1 cup butter
- 6 eggs, separated
- 3 cups flour
- 1/4 tsp. Baking powder
- 1 ctn. (8 oz.) sour cream
In a large mixing bowl, cream sugar and butter together. Add egg yolks, one at a time, stirring after each addition. In a medium bowl, combine flour and baking soda and add to creamed mixture alternately with sour cream. In a separate bowl, beat egg whites until stiff and fold into batter. Pour into a greased and floured tube pan. Bake at 300 degrees for 1 1/2 hours.
