30-Minute Smothered Italian Chicken
Is anyone else feeling a little tight on time this week, yet looking for a delicious home-made dinner in 30 minutes flat? Well, I sure am! Ella has volleyball every night this week and between game-watching and shuttling her to and fro, I am in dire need of quick dinner plans. This recipe for 30-minute Smothered Italian Chicken is a definite kitchen-keeper for families on the go. The ingredients are easily stocked ahead of prep night in the pantry and frig. Eckert’s butcher-trimmed chicken breasts are incredibly tender on their own but cooking them in this simple tomato sauce really locks in moisture, resulting in a flavorful and tender chicken dish the whole family will love.
My kids adore the pizza-like flavors of the Italian chicken and (big surprise) they especially love any dish with a sauce that they can dip their freshly baked bread slices in. If you find yourself on-the-go this week yet craving a home-made dinner. Give this recipe a try!
Eat well this new year,
14 oz diced tomatoes (I used 1/2 container of Pomi brand)
1 Tbs. olive oil
½ cup finely chopped onion (optional)
3 cloves minced garlic
1 tsp. Italian seasoning
4 Eckert’s trimmed, boneless, skinless chicken breasts
1/3 cup Provel (Imo’s Pizza) cheese (can sub Mozzarella)
¼ cup freshly grated parmesan cheese
Preheat broiler to high. Lightly spray or grease an oven proof baking dish (approximately 9” x 9”). In a medium bowl, combine tomatoes, olive oil, onion, garlic and seasoning. Pour in baking dish. Nestle chicken breasts into the sauce so that they are partially covered by the sauce.
Broil chicken for 8-12 minutes or until the internal temperature reaches 165 F. Remove the baking dish from the oven. Top chicken with cheeses and return to the oven for 2-3 minutes more under the broiler. Serve immediately with bread for dipping. Serves 4.
