Pumpkin Succotash Recipe
Ingredients
- 1 Pumpkin
- 1 cup Chicken or Vegetable broth or water
- 2 Tbsp. Butter or Olive Oil
- 2 lg. Onions, peeled and sliced
- 1 pkg. 10 oz. frozen corn
- Salt and Pepper
- Dash of Cayenne, optional
Directions
Peel pumpkin and cut into 2-inch cubes to make 4 cups. Place pumpkin in a Dutch oven; add broth and butter and layer onions on top. Cover and simmer on low for 15 minutes or until pumpkin is tender. Stir in corn, salt and pepper to taste and cayenne , if desired. Continue cooking 5 – 8 minutes or until corn is done. Serves 6 – 8.
